    The highly touted Neon Pig. The "best burger" in Oxford/MS/the South/the world. Had the Smash burger. Short version: good, but not great. An attempt at reinventing the burger when all I wanted was a burger. Long version: the staff is superb. They know their product and how it effects the product hitting the table on an order by order basis. Unpretentious, excellently versed, knowledgeable, passionate. Ideal. The environment. My grandfather used to run a mom and pop deli in Memphis for years. So I'm prejudiced. This place has that feel. The help yourself beverage coolers, the chance to chat with whoever is butchering, the long thin and somewhat uncomfortable bar seating all hint to the same: we're not here for anything other than the love of the food. Meat, specifically. So, about the food. I had the Smash burger. Same concept as The Butcher Shop does on Fridays in Memphis: all the scraps from fine cuts made into a burger. And NP went toe to toe with that and held their own. I was exceptionally pleased with the bun. It's one that traps the juices in the bread without getting soggy or falling apart, and different distinctions about the blend in the burger cones out when in the context of the other ingredients. BUT what they were going for just wasn't what I had in mind. There was too much hoisin sauce, making it sweet. Too sweet and it negated the savory aspect of the meat. The other ingredients didn't highlight the taste of the burger as they juxtapose the taste and texture of the meat to the rest of the party. I found it good, slightly flawed, and certainly not the best burger I've ever had (regionally, that award goes to Huey's in Memphis Midtown or The Butcher Shop at the Agricenter on fresh burger Fridays). Overall: worth it. The next time I'll ask them to tone down the hoisin, or maybe order something different. But it was certainly good enough to warrant going back, and because of that I'd recommend Neon Pig.

    Awesome place to check out. I had the jerky chicken sandwich and it was amazing. For my side I ordered the slaw and that was a little disappointing. The taste was good but you barely get three spoonfuls in a tiny cup. So I would recommend trying a different side. But of course their meats are what they're known for.
